Welcome to this week’s Dinner Divas Weekly Meal Plan! This week’s menu is highlights a ton of seasonal ingredients, including strawberries, blueberries, tomatoes, peaches, cherries and more. To say I’m excited about all the things we’re serving up is a huge understatement!
Also, we’ve got a delightful bakery-style breakfast and a drink that highlights my favorite warm weather fruit.
What is the weekly meal plan?
In case you’re new around these parts, I share a new menu here every Friday morning. It will always include FIVE dinner options and TWO extras, curated by me and my friends, who make up the Dinner Divas. Our dinner options feature (mostly) healthy, seasonal foods that don’t take all day to prepare because nobody has time for that. 😉 And the extras we share can be side dishes, desserts, drinks, etc.

Monday's Dinner: Summer Tomato Peach Panzanella
I cannot think of a more summery dinner than Summer Tomato Peach Panzanella! Using fresh tomatoes and peaches, this panzanella is all about that produce and also incredibly easy to put together for the whole family!
Tuesday's Dinner: Salmon Niçoise Salad
A Niçoise Salad is one of my favorite summer salads because it doesn't require a ton of work in front of the stovetop. This twist on the classic uses salmon instead of tuna. Salmon Niçoise Salad is always on our summer menu because it's relatively easy, parts can be made in advance, and it's utterly delicious.
Wednesday's Dinner: Corvina Fish Recipe with Citrus Salsa
Say it with me: Corvina fish with citrus salsa. (CITRUS. SALSA.) We love a good fish dish in our house, and this Corvina falls into that category for sure. And it's put over the top with a citrus salsa. Serve with green beans or a salad, and you're set for dinner!
Thursday's Dinner: Roast Chicken with Cherry Balsamic Glaze
We love, love, love any kind of roast chicken anytime of year, but this Cherry Balsamic Glaze elevates the classic dish. Since fresh cherries are everywhere this time of year, this recipe is perfect for make this week! (But if you can't find tart fresh ones, you can get frozen ones, too.) Do you like the idea of sweet-tart cherries on top of chicken, too?
Friday's Dinner: The Cubano Pizza
Friday night is pizza night! And if you're a Cubano lover, you're going to adore this pizza! Calling for swiss and mozzarella cheeses, ham, pulled pork, pickles, mustard and more, this pizza pie is a noted twist on any classic, but it's utterly delightful.
Drink Option: Strawberry Lemonade Iced Tea Arnold Palmer
I've been sipping all kinds of tea drinks this summer, but an Arnold Palmer is one of my favorites because it calls for lemonade, too! I love how Cheryl of Pook's Pantry transformed the summer sipper by using strawberry lemonade instead of the classic.
Breakfast Option: Bakery Style Blueberry Muffins
I don't know about you, but a big 'ol blueberry muffin with a delightful crumble on top is EXACTLY the way I want to start any day. My family members totally agree, too, and I have no doubt these blueb beauts will not last long in our house!
